Abstract

This study evaluated the caimito fruit (Chrysophyllum cainito), traditionally consumed in Yucatán, Mexico, as a functional food through detailed characterization protocols. For the first time, this work establishes a maturity index value and provides standard parameters useful when developing caimito-derived products.
