About this Project
The aim of this project is to promote healthier and more sustainable diets within the Anáhuac Mayab academic community by using the university’s cafeterias as living labs to encourage behavior change. The project is being developed collaboratively by researchers from the School of Nutrition, the School of Gastronomy, the Office of Global Vision and Sustainability, the Vice Chancellor's Office for Administration and Finance, and the Collaborative Innovation Lab (LINNCO), with the participation of the external vendors that operate the university’s cafeterias. This team also represents the university in the Menus of Change University Research Collaborative, a global network of universities working together to advance healthy and sustainable diets.
